We are always looking out for a great recipe for using Shelton's Ground Turkey.  We've found some great ones in the past, but this was especially tasty.  Give it a shot, we're sure you'll love it as much as we do.

Serves:  4

Prep Time:  15 minutes

Cook time:  15 minutes

Total time:  30 minutes

Ingredients:

1 lb Shelton's Ground Turkey

1 teaspoon thyme, finely chopped

1 clove garlic minced

1 teaspoon Dijon mustard

1 teaspoon salt and pepper (ea)

2 Tablespoons olive oil

2 cups chopped cooked Yukon gold potatoes (about 2 potatoes)

2 cups chopped cooked butternut squash (about 1 small squash)

1 med onion chopped

1 red pepper chopped

1 tablespoon butter

4 eggs

1 tablespoon chives, chopped

Directions:

1.  In a large bowl, combine Shelton's Ground Turkey, thyme, garlic, Dijon, salt and pepper.  mix together.  Heat 1 Tablespoon of the Olive Oil in a large skillet over medium heat.  Add the turkey mixture and cook for 5 to 7 minutes, or until lightly browned.  Remove from pan and set aside.

2.  In same skilled, over high heat, add remaining Olive Oil.  Add Potatoes, Squash, Onion, and Pepper.  Cook for 8 to 10 minutes, or until vegetables are tender and browned.  Add cooked Turkey mixture back to skillet.

3.  in small skillet, heat butter over medium heat. Cook eggs to desired doneness.  Serve Hash on separate plates, adding 1 egg to the top of each dish.  garnish with chives.
