We love using our Shelton's Canned Chicken in quick, easy recipes for appetizers, snacks, lunches... there are so many uses for this versatile products.  Below are 3 fast and delicious preparations that we know will satisfy anyone in your family.

Chicken Salad a la Shelton's

We've made this Chicken Salad so may times and we've never tired of it.  It's got everything going for it; tangy fruit from the cranberry, crunch from the almonds and celery, and creamy satisfaction from use of the mayonnaise to hold it all together.   Serve this on lettuce, in a sandwich with your favorite full grain bread or roll, or on crackers.  

Serves 2

Ingredients:

1 5 oz can of Shelton's Canned Chicken

1 oz toasted, slivered almonds

1 oz dried cranberries.

1 oz celery, chopped

1 oz mayonnaise (light or heavy)

Optional:  1 oz chopped red onion

Instructions:

In a bowl, combine all ingredients until thoroughly mixed.  Chill for 30 min, serve. 

 

Chicken and Fruit salad Croissants.  

This is a different take on the Chicken Salad above.  The addition of fresh, ripe seedless grapes really makes a fantastic difference.  

Serves 3

Ingredients:

2 5 oz cans Shelton's Canned Chicken 

1/3 Cup red seedless grapes, halved

2 Tablespoons onion, finely chopped

2 Tablespoons dried Cranberries

1/3 Cup mayonnaise (light or heavy)

2 Tablespoons sliced almonds

3 lettuce leaves

3 croissants, split

Instructions:

In a bowl, combine the Canned Chicken, grapes, onion, dried cranberries, and mayo.  mix to ensure mayo coats all the ingredients.  chill for about an hour.  Before service, add almonds and mix, place lettuce leaf on to croissant and add the mixture.  enjoy this tasty meal. 

 

Southwest Tortilla Bites

This is an easy and delicious finger food.  Use as snacks for a game, hors d’oueveres for a gathering, or just fun and easy eats.  They are rich and flavorful, and simple to make.  

Serves: makes about 30 pieces.

Ingredients:

2 5 oz cans Shelton's Canned Chicken

1 8 oz container of Whipped Cream Cheese.

1/4 salsa, drained

2 Tablespoons diced green chilies

1/2 Cup canned corn with green and red bell peppers

1/2 Cup canned black beans, drained and rinsed

1/2 Cup diced fresh Avocado

6 ea 8" flour tortillas

Instructions:

in a bowl, combine all ingredients and mix well.  place chicken mixture on tortillas and roll in plastic wrap.  Chill for at least 1 hour.  To Serve, unwrap rolls and cut into slices about 1 inch wide.  Serve with additional salsa or hot sauce.
